Finding his passion for cocktails while attending CSU, Mario soon decided to take his career to the pinnacle of the industry and moved to Las Vegas. After fine tuning his craft as a mixologist at the Cosmopolitan and Tao Las Vegas, he made the move back home and is now the head bartender at The Oceanaire Seafood Room Denver.

Coming from managing The Bitter Bar in Boulder, known to be the first craft cocktail bar in Colorado, Colin's most recent experience involved classic craft to avant-garde beverages. Before that he worked as Bar Manager at Le Grand Bistro.  Now you can find him behind the stick at Coohill's downtown most nights.  In his free time he enjoys working out, doing research and development (drinking), and playing with his cat (in no particular order). 

 

 

 

 

GLENFIDDICH BRAND AMBASSADOR MITCH BECHARD

 

Hailing originally from Edinburgh, Glenfiddich Brand Ambassador Mitch Bechard fell in love with the Scotch Whisky industry at a young, albeit legal, age and has been pursuing that passion ever since.  Beginning in 1990, he started to take his first steps into the world of food and drink, cutting his teeth in hotel management, as well as running restaurants and cocktail bars in places as far-flung as Portugal, England, Scotland and Australia, as he traveled the globe chasing his passion for the spirits industry.  Mitch landed a job as the whisky ambassador in the UK for the Diageo portfolio of whiskies, then moved to the US to join William Grant & Sons as the Brand Ambassador for Glenfiddich.

As Beverage Director for Root Down, Linger, and Root Down DIA I put a lot of effort into making sure our bar programs are well balanced and don't get pigeon holed as just 'having good cocktails' or just 'having a really good local wine list.'  I want people to find that our bars at all three of our locations have an equally good beer program as we do cocktail and wine programs: in short, we want to offer the best in all category and have a great selections: a little bit of everything for everyone.

TASTE

 

Taste, gustatory perception, or gustation is one of the five traditional senses.  Taste is the sensation produced when a substance in the mouth reacts chemically with receptors of taste buds.  Taste, along with smell (olfaction) and trigeminal nerve stimulation (which also handles touch for texture, also pain, and temperature), determines flavors, the sensory impressions of food or other substances.

 

Humans perceive taste through sensory organs called taste buds, or gustatory calyculi, concentrated on the top of the tongue.  There are between 2000 and 5000 taste buds that are located on the back and front of the tongue.  Others are located on the roof, sides and back of the mouth, and in the throat.  Each taste bud contains 50 to 100 taste receptor cells.

 

The sensation of taste can be categorized into five basic tastes: sourness, saltiness, umami, sweetness, and bitterness.
